Heat the coconut oil in a pan, add the Hot Coconut soup and 200 ml of water and bring everything to a simmer. Peel and finely chop the ginger. Add to the pan together with the Udon noodles and mix everything well.
Add peanut butter and stir in - simmer for about 2-3 minutes until udon noodles are cooked. Serve on plates and garnish with fresh cilantro and salted peanuts. Serve with fresh lime juice.
